One Pan Greek Chicken and Lemon Rice

Ingredients

  • 5 chicken thighs (breasts, or drumsticks (skin-on))
  • 1 lemon (zested and juiced)
  • 1 medium onion
  • 4 cloves garlic
  • 2 tablespoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1/2 cup chopped parsley


Instructions

  1. Preheat your oven to 350°F.
  2. Season the chicken with oregano, paprika, salt, pepper, and lemon zest.
  3. Heat olive oil in a skillet and cook the chicken until crispy on both sides.
  4. Remove the chicken and set aside.
  5. Sauté onion and garlic in the skillet.
  6. Add rice, broth, lemon juice, oregano, parsley, salt, and pepper to the skillet.
  7. Simmer, then place the chicken on top.
  8. Cover and bake for 35 minutes.
  9. Fluff the rice with a fork and serve immediately. Enjoy your delicious meal!
