Ingredients
  

  • 5 chicken thighs breasts, or drumsticks (skin-on)
  • 1 lemon zested and juiced
  • 1 medium onion
  • 4 cloves garlic
  • 2 tablespoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1/2 cup chopped parsley

Instructions
 

  • Preheat your oven to 350°F.
  • Season the chicken with oregano, paprika, salt, pepper, and lemon zest.
  • Heat olive oil in a skillet and cook the chicken until crispy on both sides.
  • Remove the chicken and set aside.
  • Sauté onion and garlic in the skillet.
  • Add rice, broth, lemon juice, oregano, parsley, salt, and pepper to the skillet.
  • Simmer, then place the chicken on top.
  • Cover and bake for 35 minutes.
