Oatmeal Breakfast Cookies

Ingredients
  

  • 1/2 cup creamy almond butter or any other nut or seed butter
  • 1/4 cup unsweetened applesauce
  • 1/4 cup maple syrup or agave or honey
  • 1 teaspoon vanilla extract
  • 1 large egg or flax egg
  • 2 1/4 cups old-fashioned oats
  • 1 cup almond flour or oat flour
  • 1/4 cup ground flax
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 cup dairy-free chocolate chips
  • 1/3 cup chopped walnuts

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together almond butter, applesauce, maple syrup, vanilla extract, and egg until well combined.
  • Add oats, almond flour, ground flax, cinnamon, and baking soda to the bowl. Mix until all ingredients are combined.
  • Fold in chocolate chips and walnuts.
  • Using a double cookie scoop, drop cookie dough onto the prepared baking sheet. Add extra chocolate chips on top if desired, then flatten the tops with your hand.
  • Bake for 10 minutes.
  • Allow the cookies to cool for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Mix wet ingredients before adding dry ones for smoother blending.
  • Flatten cookie dough before baking as they won’t spread much.
  • Feel free to add more chocolate chips on top for extra indulgence.
