Ingredients

  • 1/2 cup creamy almond butter (or any other nut or seed butter)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup maple syrup (or agave or honey)
  • 1 teaspoon vanilla extract
  • 1 large egg (or flax egg)
  • 2 1/4 cups old-fashioned oats
  • 1 cup almond flour (or oat flour)
  • 1/4 cup ground flax
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 cup dairy-free chocolate chips
  • 1/3 cup chopped walnuts


Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together almond butter, applesauce, maple syrup, vanilla extract, and egg until well combined.
  3. Add oats, almond flour, ground flax, cinnamon, and baking soda to the bowl. Mix until all ingredients are combined.
  4. Fold in chocolate chips and walnuts.
  5. Using a double cookie scoop, drop cookie dough onto the prepared baking sheet. Add extra chocolate chips on top if desired, then flatten the tops with your hand.
  6. Bake for 10 minutes.
  7. Allow the cookies to cool for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Mix wet ingredients before adding dry ones for smoother blending.
