Oatmeal Breakfast Cookies
Servings 12 large cookies
Ingredients
- 1/2 cup creamy almond butter or any other nut or seed butter
- 1/4 cup unsweetened applesauce
- 1/4 cup maple syrup or agave or honey
- 1 teaspoon vanilla extract
- 1 large egg or flax egg
- 2 1/4 cups old-fashioned oats
- 1 cup almond flour or oat flour
- 1/4 cup ground flax
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 cup dairy-free chocolate chips
- 1/3 cup chopped walnuts
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together almond butter, applesauce, maple syrup, vanilla extract, and egg until well combined.
- Add oats, almond flour, ground flax, cinnamon, and baking soda to the bowl. Mix until all ingredients are combined.
- Fold in chocolate chips and walnuts.
- Using a double cookie scoop, drop cookie dough onto the prepared baking sheet. Add extra chocolate chips on top if desired, then flatten the tops with your hand.
- Bake for 10 minutes.
- Allow the cookies to cool for 5 minutes before transferring them to a wire rack to cool completely.

Notes
- Mix wet ingredients before adding dry ones for smoother blending.
