No Bake Bites:

  • 1/2 cup all-natural creamy almond butter (or any nut or seed butter)
  • 1/4 cup maple syrup (or honey, agave, or date syrup)
  • 1 1/4 cups oat flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup shredded carrots

White Chocolate Coating:

  • 1/2 cup white chocolate chips (melted with 1 tablespoon coconut oil)

Other Additions:

  • Walnuts
  • Raisins
  • Cinnamon
  • Ground ginger


Instructions

  1. Mix maple syrup, almond butter, cinnamon, ground ginger, and nutmeg in a bowl until fully combined.
  2. Add oat flour and carrots, mix well.
  3. Roll dough into balls and freeze while you melt the white chocolate.
  4. Dip balls in white chocolate, then freeze briefly.
  5. Drizzle with more white chocolate, add walnuts and cinnamon, then freeze until firm.
  6. Enjoy these bites straight from the fridge or freezer!

Notes

  • Use smooth and creamy all-natural almond butter.
  • Freshly grated carrots work best for flavor and texture.
  • Store these bites in the fridge for a quick snack or dessert, or freeze them for longer storage. Just thaw for a few minutes before enjoying!
