No Bake Carrot Cake Bites

Ingredients
  

No Bake Bites:

  • 1/2 cup all-natural creamy almond butter or any nut or seed butter
  • 1/4 cup maple syrup or honey, agave, or date syrup
  • 1 1/4 cups oat flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup shredded carrots

White Chocolate Coating:

  • 1/2 cup white chocolate chips melted with 1 tablespoon coconut oil

Other Additions:

  • Walnuts
  • Raisins
  • Cinnamon
  • Ground ginger

Instructions
 

  • Mix maple syrup, almond butter, cinnamon, ground ginger, and nutmeg in a bowl until fully combined.
  • Add oat flour and carrots, mix well.
  • Roll dough into balls and freeze while you melt the white chocolate.
  • Dip balls in white chocolate, then freeze briefly.
  • Drizzle with more white chocolate, add walnuts and cinnamon, then freeze until firm.
  • Enjoy these bites straight from the fridge or freezer!

Notes

  • Use smooth and creamy all-natural almond butter.
  • Freshly grated carrots work best for flavor and texture.
  • Store these bites in the fridge for a quick snack or dessert, or freeze them for longer storage. Just thaw for a few minutes before enjoying!
