No Bake Carrot Cake Bites

Ingredients
No Bake Bites:
- 1/2 cup all-natural creamy almond butter or any nut or seed butter
- 1/4 cup maple syrup or honey, agave, or date syrup
- 1 1/4 cups oat flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground ginger
- 1/2 cup shredded carrots
White Chocolate Coating:
- 1/2 cup white chocolate chips melted with 1 tablespoon coconut oil
Other Additions:
- Walnuts
- Raisins
- Cinnamon
- Ground ginger
Instructions
- Mix maple syrup, almond butter, cinnamon, ground ginger, and nutmeg in a bowl until fully combined.
- Add oat flour and carrots, mix well.
- Roll dough into balls and freeze while you melt the white chocolate.
- Dip balls in white chocolate, then freeze briefly.
- Drizzle with more white chocolate, add walnuts and cinnamon, then freeze until firm.
- Enjoy these bites straight from the fridge or freezer!
