Mini Pecan Pies

Ingredients
  

  • 1 roll of refrigerated pie crust
  • 1.5 cups of chopped pecans
  • 2 tablespoons of melted grass-fed butter
  • 1/2 cup of coconut sugar
  • 1 tablespoon of ground cinnamon
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 1/4 cup of pure maple syrup

Instructions
 

  • Preheat your oven to 400°F.
  • Start by preparing the filling: In a large bowl, whisk together the melted butter, coconut sugar, cinnamon, vanilla extract, eggs, and maple syrup. Then, fold in the chopped pecans and set aside.
  • Roll out the pie dough on a floured surface and use a circle cookie cutter or the top of a glass to cut out circles. Place each circle into a muffin tin, pressing the dough to fit the edges.
  • Spoon about 1 tablespoon of filling into each pie crust and bake for 18-20 minutes.
  • Once baked, let the pies cool in the muffin tins for 15 minutes before removing and indulging in these delightful treats.

Notes

  • Store-bought pie dough makes this recipe quick and easy.
  • Feel free to use homemade pie crust if you prefer.
  • Combine the wet ingredients before adding the pecans for a smoother filling.
