Mini Banana Bread Loaves

Introducing… No Sugar Added Mini Banana Bread Loaves! I’m transforming one of the most loved recipes from my blog – the No Sugar Added Cinnamon Banana Bread – into individual portions that are perfect for grabbing on the go or storing in the freezer. And guess what? You can whip up the entire batch right in your blender! These little loaves are bursting with flavor, and I’m super excited for you to give them a try. Oh, and hey parents – these are awesome for kids too! 😊

Here’s what you’ll need to make either 1 regular loaf or 8 mini loaves:

Mini Banana Bread Loaves

Ingredients
  

  • 1 1/2 cups almond flour
  • 1/4 cup tapioca flour
  • 3 tablespoons coconut flour
  • 4 very ripe bananas if they’re large, use 3
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • **You can add any toppings you want like chocolate chips, nuts, etc.

Instructions
 

  • Preheat your oven to 350°F. If you’re using silicone trays, there’s no need to grease them. But if you’re using a standard loaf pan, line it with parchment paper first.
  • In your blender, blend the bananas and wet ingredients for about 10-15 seconds until just mixed (a few chunks are totally fine!). Then, add the dry ingredients and blend again on low until everything is just mixed together (you may need to scrape down the sides with a spatula).
  • Pour the batter into the mini loaf pan or regular loaf pan. Add any toppings you like.
  • For mini loaves: Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
  • For regular loaves: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the loaves cool, sprinkle a little extra cinnamon on top for good measure, and enjoy! 🍌
