Mini Apple Pies

Ingredients

  • 1 roll of refrigerated pie crust
  • 2 red apples (peeled and diced)
  • 1/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 1 tbsp ground cinnamon


Instructions

  1. Preheat the oven to 400°F.
  2. Peel and dice the apples into small pieces, then mix them in a bowl with coconut sugar and cinnamon. Set aside.
  3. Roll out the pie dough on a floured surface and use a circle cookie cutter or the top of a glass to cut out circles.
  4. Place the circles in muffin tins and press them to the edges.
  5. Add about a tablespoon of the apple mixture to each pie crust.
  6. Use a pizza cutter to slice strips from the remaining pie dough and place them on top of each pie, overlapping every other one.
  7. Lightly coat the tops of each pie with non-stick spray and sprinkle with turbinado sugar.
  8. Bake for 18-20 minutes, then let cool in the muffin tin for 10 minutes before removing. Enjoy!

Notes

  • Pre-made store-bought pie dough makes this recipe quick and easy.
  • If you prefer homemade pie crust, feel free to use it.
  • Prepare the apples first to let them marinate before filling the pie crusts.
  • While not obligatory, adding a top crust makes the pies look extra charming.
