Mini Apple Pies

Ingredients

  • 1 roll of refrigerated pie crust
  • 2 red apples peeled and diced
  • 1/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 1 tbsp ground cinnamon

Instructions

  • Preheat the oven to 400°F.
  • Peel and dice the apples into small pieces, then mix them in a bowl with coconut sugar and cinnamon. Set aside.
  • Roll out the pie dough on a floured surface and use a circle cookie cutter or the top of a glass to cut out circles.
  • Place the circles in muffin tins and press them to the edges.
  • Add about a tablespoon of the apple mixture to each pie crust.
  • Use a pizza cutter to slice strips from the remaining pie dough and place them on top of each pie, overlapping every other one.
  • Lightly coat the tops of each pie with non-stick spray and sprinkle with turbinado sugar.
  • Bake for 18-20 minutes, then let cool in the muffin tin for 10 minutes before removing. Enjoy!

Notes

  • Pre-made store-bought pie dough makes this recipe quick and easy.
  • If you prefer homemade pie crust, feel free to use it.
  • Prepare the apples first to let them marinate before filling the pie crusts.
  • While not obligatory, adding a top crust makes the pies look extra charming.
