Mini Apple Pies

Ingredients
- 1 roll of refrigerated pie crust
- 2 red apples peeled and diced
- 1/3 cup coconut sugar
- 1 tsp vanilla extract
- 1 tbsp ground cinnamon
Instructions
- Preheat the oven to 400°F.
- Peel and dice the apples into small pieces, then mix them in a bowl with coconut sugar and cinnamon. Set aside.
- Roll out the pie dough on a floured surface and use a circle cookie cutter or the top of a glass to cut out circles.
- Place the circles in muffin tins and press them to the edges.
- Add about a tablespoon of the apple mixture to each pie crust.
- Use a pizza cutter to slice strips from the remaining pie dough and place them on top of each pie, overlapping every other one.
- Lightly coat the tops of each pie with non-stick spray and sprinkle with turbinado sugar.
- Bake for 18-20 minutes, then let cool in the muffin tin for 10 minutes before removing. Enjoy!
Notes
- Pre-made store-bought pie dough makes this recipe quick and easy.
- If you prefer homemade pie crust, feel free to use it.
- Prepare the apples first to let them marinate before filling the pie crusts.
- While not obligatory, adding a top crust makes the pies look extra charming.
