Preheat the oven to 400°F.
Peel and dice the apples into small pieces, then mix them in a bowl with coconut sugar and cinnamon. Set aside.
Roll out the pie dough on a floured surface and use a circle cookie cutter or the top of a glass to cut out circles.
Place the circles in muffin tins and press them to the edges.
Add about a tablespoon of the apple mixture to each pie crust.
Use a pizza cutter to slice strips from the remaining pie dough and place them on top of each pie, overlapping every other one.
Lightly coat the tops of each pie with non-stick spray and sprinkle with turbinado sugar.
Bake for 18-20 minutes, then let cool in the muffin tin for 10 minutes before removing. Enjoy!
