Matcha Brownies

Ingredients

  • 1 1/4 sticks of unsalted butter 1/2 cup + 2 tbsp
  • 1/2 cup white chocolate chips
  • 2 tbsp matcha powder
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 tsp bourbon vanilla extract
  • 1/2 tsp kosher salt
  • 3 large eggs
  • 3/4 cup all-purpose flour

Instructions

  • Preheat your oven to 350°F and prepare an 8×8 inch pan with non-stick spray and parchment paper.
  • Melt butter in the microwave or on the stovetop, then mix with white chocolate chips and matcha powder until smooth.
  • In a separate bowl, beat granulated sugar, brown sugar, and eggs with an electric mixer until thick and airy.
  • Pour the matcha ganache into the egg mixture, add vanilla extract, and mix well.
  • Sift in flour and salt, then fold until just combined.
  • Pour batter into the prepared pan and bake for 20 minutes. Drop the pan on the counter a few times, then bake for an additional 15 minutes.
  • Let the brownies cool on the counter, then slice and enjoy!

Notes

  • Beat eggs and sugar until thick and airy.
  • Gently fold in sifted flour.
  • Drop brownies on the counter during baking and after they’re done.
  • Ensure brownies are at room temperature before slicing, or chill for easier cutting.
