Matcha Brownies

Ingredients
- 1 1/4 sticks of unsalted butter 1/2 cup + 2 tbsp
- 1/2 cup white chocolate chips
- 2 tbsp matcha powder
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 3 tsp bourbon vanilla extract
- 1/2 tsp kosher salt
- 3 large eggs
- 3/4 cup all-purpose flour
Instructions
- Preheat your oven to 350°F and prepare an 8×8 inch pan with non-stick spray and parchment paper.
- Melt butter in the microwave or on the stovetop, then mix with white chocolate chips and matcha powder until smooth.
- In a separate bowl, beat granulated sugar, brown sugar, and eggs with an electric mixer until thick and airy.
- Pour the matcha ganache into the egg mixture, add vanilla extract, and mix well.
- Sift in flour and salt, then fold until just combined.
- Pour batter into the prepared pan and bake for 20 minutes. Drop the pan on the counter a few times, then bake for an additional 15 minutes.
- Let the brownies cool on the counter, then slice and enjoy!
Notes
- Beat eggs and sugar until thick and airy.
- Gently fold in sifted flour.
- Drop brownies on the counter during baking and after they’re done.
- Ensure brownies are at room temperature before slicing, or chill for easier cutting.
