Marry Me Chicken

Ingredients
  

  • 3 tablespoons extra-virgin olive oil
  • 4 boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon crushed red pepper flakes
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup chopped sun-dried tomatoes
  • 1/4 cup freshly grated Parmesan
  • Fresh basil torn, for serving

Instructions
 

  • Preheat your oven to 375°F. Heat 1 tablespoon of oil in a large oven-safe skillet over medium-high heat. Season the chicken generously with salt and pepper, then sear until golden on each side for about 5 minutes. Transfer the chicken to a plate.
  • Lower the heat to medium and add the remaining 2 tablespoons of oil to the skillet. Stir in the garlic, thyme, and red pepper flakes, cooking until fragrant for about 1 minute. Add the broth, heavy cream, sun-dried tomatoes, Parmesan, and season with more salt if needed. Let it simmer, then return the chicken to the skillet.
  • Transfer the skillet to the oven and bake until the chicken is fully cooked through, about 10 to 12 minutes.
  • Garnish with torn basil and serve up your delicious “Marry Me” chicken!
