Loaded Tater Tot Cups

Turn your favorite loaded baked potatoes into crispy cheesy tater tot cups! These bite-sized delights are not only scrumptious but also super simple to whip up. Packed with sour cream, beef bacon, cheddar cheese, and chives, they’re a miniature version of the classic loaded baked potato!

Loaded Tater Tot Cups

Ingredients
  

  • 1 bag of frozen tater tots
  • Avocado oil spray
  • Sour cream
  • Beef bacon diced
  • Green onions or chives thinly sliced
  • Shredded cheddar cheese

**For the Garlic Butter:**

  • 1/4 cup unsalted butter melted
  • 1 tablespoon finely chopped parsley
  • 1/2 tablespoon minced garlic
  • 2 tablespoons grated Parmesan
  • 1/4 teaspoon salt or to taste
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon dried oregano

Instructions
 

**Making the Garlic Butter:**

  • Combine butter, parsley, garlic, Parmesan, salt, black pepper, and oregano in a small bowl.

**Making the Cups:**

  • Preheat your oven to 425°F.
  • Brush each cup in a cupcake tray with garlic butter or spray with avocado oil.
  • Place 5 to 6 tater tots into each cup and bake for 10 minutes.
  • Remove from the oven and use a shot glass to press the tater tots into cup shapes.
  • Brush the insides with more garlic butter and sprinkle a bit of shredded cheddar cheese into each cup.
  • Return to the oven and bake for 13 to 17 minutes until golden and crispy.
  • Allow to cool for 5 minutes, then gently slide out the cups.
  • Fill each cup with sour cream, beef bacon, green onions, and more cheese, and serve warm!

Notes

The garlic butter is optional. You can use avocado oil spray if your cupcake tray isn’t non-stick.
