Description

These Key Lime Pie Rice Krispie Treats are a bright, no-bake mashup of classic cereal treats and key lime pie flavors. With graham crackers, fresh lime, and white chocolate, they make an easy, cheerful dessert for spring and summer gatherings.


Ingredients

  • 3 tbsp butter
  • 1 (10 oz) package marshmallows, or 4 cups mini marshmallows
  • 5 cups Rice Krispies cereal
  • 1 cup graham crackers, crushed
  • 1 whole lime, zest and juice
  • 1 cup white chocolate chips


Instructions

  1. Lightly coat a 13x9x2-inch baking pan with baking spray. Set the pan aside so it is ready once the mixture is finished.
  2. Place the butter in a heavy-bottomed saucepan and melt it over low heat. Keep the heat gentle so the butter melts smoothly without browning too quickly.
  3. Add the marshmallows to the pan, along with the lime zest and lime juice. Stir continuously over low heat until the marshmallows melt completely and the mixture becomes smooth and evenly blended.
  4. Remove the saucepan from the heat once everything is fully combined.
  5. Add the Rice Krispies cereal and the crushed graham crackers. Stir until the dry ingredients are coated well with the melted marshmallow mixture.
  6. Fold in the white chocolate chips and mix just until they are evenly distributed through the cereal mixture.
  7. Transfer the mixture into the prepared pan. Use a spatula to press it into an even layer. For easier handling, lightly spray the spatula with baking spray before pressing the mixture into the pan.
  8. Place the pan in the refrigerator for 20 to 30 minutes, or until the bars are cool and firm enough to cut cleanly.
  9. Cut into squares and serve.
