Joe & The Juice Tuna Sandwich Copycat
- Sourdough slices
- 1 can (12 ounces tuna, drained)
- 1/2 cup mayonnaise
- 1/2 tablespoon lemon juice
- 1/4 cup diced red onion
- 1/4 teaspoon black pepper (adjust to taste)
- 1/4 teaspoon salt (adjust to taste)
- 2 to 3 tablespoons diced jalapeños
- 1/2 tablespoon yellow mustard
- 1 tablespoon chopped cilantro
- Pesto
- Sliced tomatoes
- Sliced avocado
- Hot sauce
**Chipotle Aioli (optional):**
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- Juice of 1 lime
- 1/2 tablespoon honey
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 2 tablespoons adobo paste
- Chipotle peppers (pureed into a paste for spiciness)
- Prepare the tuna filling: In a bowl, mash the tuna well. Add mayo, lemon juice, red onion, black pepper, salt, jalapeños, mustard, and cilantro. Mix well.
- Make the chipotle sauce: Combine mayo, sour cream, lime juice, honey, black pepper, chili powder, adobo sauce, and chipotle pepper paste in a small bowl. Mix until smooth.
- Heat a grill or panini press and spray with oil. Toast two slices of bread per sandwich until crispy and golden brown.
- On one slice of bread, spread a layer of pesto, followed by avocado, tomato, and tuna. Spread chipotle mayo on the other slice of bread and close the sandwich.
- Cut in half and enjoy with your favorite hot sauce.
- For a mousse-like consistency, blend the tuna until smooth and fluffy.
- Add hot sauce or red chili flakes for extra spiciness.
