Honey Chipotle Criss-Cut Chicken

  • 1 pound chicken breast (2 large breasts)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon oregano
  • 2 tablespoons chipotle adobo paste
  • 2 to 3 tablespoons honey
  • 1 tablespoon lime juice
  • 1 to 2 tablespoons unsalted butter
  1. Begin by scoring the chicken breast to create a criss-cross pattern. Make vertical cuts about 2/3 of the way down, then make horizontal cuts across the breast in the same manner. This creates squares all around the chicken, allowing the marinade to penetrate deeply.
  2. In a small bowl, mix together olive oil, salt, garlic powder, chili powder, black pepper, cumin, coriander, oregano, and chipotle adobo paste.
  3. Cook the chicken on a hot skillet or pan over medium-high heat until both sides develop a golden brown sear. Reduce the heat to low, cover, and cook until the center is fully cooked.
  4. Towards the end, add a knob of unsalted butter, honey, lime juice, and cilantro. Baste the chicken with the mixture, then remove it from the pan.
  5. Enjoy your delicious and flavorful chicken while it’s warm!
