Honey Chipotle Criss-Cut Chicken

Ingredients

  • 1 pound chicken breast 2 large breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon oregano
  • 2 tablespoons chipotle adobo paste
  • 2 to 3 tablespoons honey
  • 1 tablespoon lime juice
  • 1 to 2 tablespoons unsalted butter

Instructions

  • Begin by scoring the chicken breast to create a criss-cross pattern. Make vertical cuts about 2/3 of the way down, then make horizontal cuts across the breast in the same manner. This creates squares all around the chicken, allowing the marinade to penetrate deeply.
  • In a small bowl, mix together olive oil, salt, garlic powder, chili powder, black pepper, cumin, coriander, oregano, and chipotle adobo paste.
  • Cook the chicken on a hot skillet or pan over medium-high heat until both sides develop a golden brown sear. Reduce the heat to low, cover, and cook until the center is fully cooked.
  • Towards the end, add a knob of unsalted butter, honey, lime juice, and cilantro. Baste the chicken with the mixture, then remove it from the pan.
  • Enjoy your delicious and flavorful chicken while it’s warm!
