Begin by scoring the chicken breast to create a criss-cross pattern. Make vertical cuts about 2/3 of the way down, then make horizontal cuts across the breast in the same manner. This creates squares all around the chicken, allowing the marinade to penetrate deeply.
In a small bowl, mix together olive oil, salt, garlic powder, chili powder, black pepper, cumin, coriander, oregano, and chipotle adobo paste.
Cook the chicken on a hot skillet or pan over medium-high heat until both sides develop a golden brown sear. Reduce the heat to low, cover, and cook until the center is fully cooked.
Towards the end, add a knob of unsalted butter, honey, lime juice, and cilantro. Baste the chicken with the mixture, then remove it from the pan.
