Honey Chipotle Chicken Fajitas

Ingredients

  • 2 large chicken breasts approximately 1.5 pounds, thinly sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 3 tablespoons of olive oil
  • 3 to 4 tablespoons of adobo paste
  • 2 teaspoons of minced fresh garlic
  • 1 tablespoon of chili powder
  • 1 teaspoon of coriander
  • 1 teaspoon of paprika
  • 1 teaspoon of oregano
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of cumin
  • 1 teaspoon of salt adjust to taste
  • 2 tablespoons of honey
  • 1/4 cup of shredded Mexican cheese
  • Chopped cilantro for garnish

Instructions

  • Preheat your oven to 425°F.
  • In a bowl, mix together the chicken, olive oil, adobo paste, garlic, chili powder, coriander, oregano, onion powder, cumin, salt, and honey.
  • Spread the bell peppers and marinated chicken onto a sheet pan.
  • Bake in the oven for about 20 minutes until the chicken is cooked through and gets a nice sear.
  • Optionally, sprinkle cheese on top and let it melt in the oven for 1 to 2 more minutes.
  • Garnish with chopped cilantro and serve warm with tortillas, sour cream, and lime wedges!

Notes

  • Feel free to include sliced red onions with the bell peppers for added flavor!
  • Be cautious to use only adobo paste, not chipotle peppers from the can, unless you prefer an extra spicy kick.
