Honey Chipotle Chicken Fajitas

Ingredients
- 2 large chicken breasts approximately 1.5 pounds, thinly sliced
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 yellow bell pepper sliced
- 3 tablespoons of olive oil
- 3 to 4 tablespoons of adobo paste
- 2 teaspoons of minced fresh garlic
- 1 tablespoon of chili powder
- 1 teaspoon of coriander
- 1 teaspoon of paprika
- 1 teaspoon of oregano
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of cumin
- 1 teaspoon of salt adjust to taste
- 2 tablespoons of honey
- 1/4 cup of shredded Mexican cheese
- Chopped cilantro for garnish
Instructions
- Preheat your oven to 425°F.
- In a bowl, mix together the chicken, olive oil, adobo paste, garlic, chili powder, coriander, oregano, onion powder, cumin, salt, and honey.
- Spread the bell peppers and marinated chicken onto a sheet pan.
- Bake in the oven for about 20 minutes until the chicken is cooked through and gets a nice sear.
- Optionally, sprinkle cheese on top and let it melt in the oven for 1 to 2 more minutes.
- Garnish with chopped cilantro and serve warm with tortillas, sour cream, and lime wedges!
Notes
- Feel free to include sliced red onions with the bell peppers for added flavor!
- Be cautious to use only adobo paste, not chipotle peppers from the can, unless you prefer an extra spicy kick.
