Preheat your oven to 425°F.
In a bowl, mix together the chicken, olive oil, adobo paste, garlic, chili powder, coriander, oregano, onion powder, cumin, salt, and honey.
Spread the bell peppers and marinated chicken onto a sheet pan.
Bake in the oven for about 20 minutes until the chicken is cooked through and gets a nice sear.
Optionally, sprinkle cheese on top and let it melt in the oven for 1 to 2 more minutes.
Garnish with chopped cilantro and serve warm with tortillas, sour cream, and lime wedges!
