Honey Butter Garlic Chicken
Ingredients
- 1 pound of boneless skinless chicken thighs, chopped into small pieces
- 2 tablespoons of cornstarch
- 1 tablespoon of olive oil
- 1 tablespoon of Challenge Unsalted Butter
- 1 teaspoon of chili powder
- 3/4 teaspoon of salt adjust to your liking
- 1/2 teaspoon of black pepper
- 1/2 tablespoon of minced garlic
- 1 teaspoon of red pepper flakes optional
- 2 to 4 tablespoons of honey adjust according to taste
- 2 tablespoons of finely chopped cilantro
- 1/2 tablespoon of rice vinegar
- 2 tablespoons of Challenge Unsalted Butter
- Chopped cilantro or green onions for garnish
Instructions
- Toss the chicken pieces in a bowl with cornstarch until they’re evenly coated.
- Heat a skillet over medium-high heat and add olive oil along with Challenge Unsalted Butter.
- Add the coated chicken to the skillet, season with salt and pepper, and cook until golden brown and cooked through, about 5 minutes.
- Stir in minced garlic, red pepper flakes (if using), honey, cilantro, rice vinegar, and more unsalted butter.
- Saute until the chicken is golden brown and coated in the luscious sauce, which should take about 3 to 4 minutes.
- Once done, remove from the heat and garnish with additional cilantro. Serve over rice, steamed veggies, or wrap it in lettuce leaves!
Notes
Quick tip: If you only have salted butter on hand, you can still use it. Challenge Butter has a helpful article on substituting salted for unsalted butter. Since we’re using only about 3 tablespoons of butter in this recipe, the salt addition is minimal. Adjust the salt you add accordingly. Enjoy your delightful meal!
