Homemade Snickers Protein Bars

Ingredients
  

Nougat Oat Layer

  • 1.5 cups oat flour
  • ½ cup vanilla protein powder we used Garden of Life Whey
  • ½ cup maple syrup
  • cup all-natural drippy peanut butter

Peanut Butter Caramel Layer

  • ½ cup all-natural drippy peanut butter
  • ½ cup maple syrup
  • ¼ cup melted coconut oil
  • ¾ cup chopped salted peanuts

Chocolate Coating

  • 1.5 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions
 

  • Line an 8×8-inch pan with parchment paper and set aside.
  • For the Nougat Oat Layer, mix all ingredients in a large bowl until a thick dough forms. Press firmly into the lined pan.
  • Prepare the Peanut Butter Caramel Layer by mixing peanut butter, maple syrup, and coconut oil. Fold in the peanuts and spread over the oat layer. Freeze for 1 hour.
  • Melt chocolate chips and coconut oil. Coat each bar with chocolate and place on a wire rack to set.
  • Once set, store the bars in a freezer-safe bag or container.

Notes

  • Use any vanilla, chocolate, or caramel protein powder, whether whey or vegan.
  • Add extra peanuts for a crunchier Snickers bar experience.
