Preheat your oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat.
In a large mixing bowl, combine oat flour, salt, and baking powder. If you don’t have oat flour, you can easily make your own by blending oats until finely ground.
Add yogurt and maple syrup to the dry ingredients and mix until a dough forms. Use your hands if needed to fully incorporate the ingredients.
Dust your hands and work surface with oat flour, then transfer the dough onto the surface. Knead the dough until well combined.
Use a rolling pin to roll out the dough into a large rectangle.
Using a knife, cut the dough into 6 equal-sized rectangles, which will be the tops and bottoms of your pop-tarts. You’ll be able to make three full-sized pop-tarts with this recipe.
Place three rectangles on the prepared baking sheet and spoon about 1-2 teaspoons of guava-fig jam onto each.
Place the remaining three rectangles on top of the jam-filled ones. Use a fork to crimp the edges together, sealing the pop-tarts. Don’t worry if some jam spills out.
Brush the tops of the pop-tarts with almond milk and bake in the preheated oven for 15-20 minutes, or until the tops are firm.
Let the pop-tarts cool slightly before preparing the icing. To make the icing, mix powdered sugar, vanilla extract, and almond milk until smooth. Drizzle the icing over the cooled pop-tarts and immediately sprinkle with colorful sprinkles.
