Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine oat flour, salt, and baking powder. If you don’t have oat flour, you can easily make your own by blending oats until finely ground.
- Add yogurt and maple syrup to the dry ingredients and mix until a dough forms. Use your hands if needed to fully incorporate the ingredients.
- Dust your hands and work surface with oat flour, then transfer the dough onto the surface. Knead the dough until well combined.
- Use a rolling pin to roll out the dough into a large rectangle.
- Using a knife, cut the dough into 6 equal-sized rectangles, which will be the tops and bottoms of your pop-tarts. You’ll be able to make three full-sized pop-tarts with this recipe.
- Place three rectangles on the prepared baking sheet and spoon about 1-2 teaspoons of guava-fig jam onto each.
- Place the remaining three rectangles on top of the jam-filled ones. Use a fork to crimp the edges together, sealing the pop-tarts. Don’t worry if some jam spills out.
- Brush the tops of the pop-tarts with almond milk and bake in the preheated oven for 15-20 minutes, or until the tops are firm.
- Let the pop-tarts cool slightly before preparing the icing. To make the icing, mix powdered sugar, vanilla extract, and almond milk until smooth. Drizzle the icing over the cooled pop-tarts and immediately sprinkle with colorful sprinkles.
- Enjoy your delicious homemade vegan oat flour pop-tarts! This recipe yields three pop-tarts.
