Homemade Bagels

Ingredients

**Bagel Dough:**

  • 1 cup warm water about 110°F
  • 1/2 cup warm milk about 110°F
  • 2 1/2 teaspoons active dry yeast
  • 2 tablespoons granulated white sugar
  • 4 cups bread flour plus more for kneading
  • 2 teaspoons salt

**Boiling Water:**

  • 1 teaspoon baking soda
  • 2 to 3 tablespoons honey
  • 1 1/2 teaspoons salt

**Egg Wash:**

  • 1 large egg
  • 1 tablespoon whole milk

**Toppings:**

  • Everything bagel seasoning sesame seeds, brown sugar & cinnamon, jalapeño and cheddar, poppy seeds

Instructions

**Make the Dough:**

  • – Proof the yeast by mixing it with 1/4 cup warm water and 1 teaspoon sugar. Let it sit for 10 minutes until frothy.
  • – In a large bowl, whisk together bread flour, salt, and remaining sugar. Add the remaining warm water, warm milk, and proofed yeast. Knead until elastic and soft.
  • – Transfer the dough to an oiled bowl, cover, and let it rise in a warm place for about an hour until doubled in size.
  • – Punch the dough down and divide into 10 equal portions. Shape each into a ball and let them rest for 15 minutes.
  • – Poke a hole in the center of each ball and enlarge the hole. Let them rise again for 15 minutes.

**Boiling:**

  • – In a large pot, boil water with honey and baking soda. Add the bagels, a few at a time, and boil for 1 to 2 minutes on each side.

**Toppings:**

  • – Whisk egg and milk for the egg wash. Brush the boiled bagels and sprinkle with toppings.

**Baking:**

  • – Preheat oven to 425°F and bake the bagels for about 20 minutes until golden brown and crispy outside, yet fluffy inside! Enjoy your homemade bagels!
