- 1.5 cups mashed overripe banana (approximately 3 large bananas)
- 1/2 cup almond butter
- 1/4 cup ground flax
- 1.5 cups oats
- 3/4 cup oat flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F and line an 8×8 pan with parchment paper. Here’s a pro tip: lightly spray the pan with non-stick spray before laying down the parchment paper to keep it from sliding around.
- In a large bowl, thoroughly mash the bananas using a fork or potato masher until smooth.
- Add in the almond butter, ground flax, and cinnamon, and mix well.
- Next, fold in the oats, oat flour, and baking powder until everything is nicely combined. Lastly, gently stir in the chocolate chips.
- Pour the mixture into the prepared 8×8 dish and spread it out evenly. Bake in the preheated oven for about 18 minutes.
- Once baked, allow the bars to cool completely before cutting into them.
- Store your oat bars in an airtight container in the fridge for up to 4-5 days.
