Grilled Avocado

Ingredients
  

  • 2 tablespoons extra-virgin olive oil plus more for the grill
  • 1 clove garlic grated
  • 1 teaspoon finely grated lime zest
  • 1 tablespoon fresh lime juice
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of red pepper flakes
  • 2 avocados pitted and quartered lengthwise (leave the skin on)
  • Fresh cilantro flaky sea salt, and lime wedges for serving

Instructions
 

  • Step 1: Heat up your grill to high heat and grease the grates with oil. In a small bowl, whisk together the olive oil, garlic, lime zest, lime juice, oregano, kosher salt, black pepper, and red pepper flakes.
  • Step 2: Lightly drizzle the avocado quarters with oil. Grill them, turning once, until you see grill marks on the flesh side and the avocados have slightly softened, about 2 minutes per side.
  • Step 3: Scoop out the avocado flesh onto a plate. Give the vinaigrette a quick whisk, then drizzle it over the avocados. Garnish with sea salt and cilantro. Serve with lime wedges on the side. Enjoy your grilled avocado delight!
