Avocados are amazing, right? But have you ever tried grilling them? Believe it or not, grilling avocados takes their deliciousness to a whole new level. Not only do they get a fantastic charred and smoky flavor, but they also become incredibly tender and extra creamy. You can enjoy grilled avocados with just a squeeze of lime juice and a sprinkle of salt, or try them with a slightly spicy garlic-oregano dressing like we do here. They’re perfect for any recipe that features avocados, except maybe for desserts like avocado ice cream—let’s stick to the savory stuff, shall we?

Did you know that there are many types of avocados out there? The most common one is the Hass avocado, with its bumpy skin that turns dark when ripe. You can use Hass avocados for this recipe, or try grilling other varieties like Bacon, Reed, or Fuerte. If you’re lucky to live where avocados grow locally, explore your farmers’ market for some exciting new types.

For grilling, avocados that are almost ripe are your best bet. They hold up better on the grill when they’re not too soft.

Grilled Avocado

Ingredients

  • 2 tablespoons extra-virgin olive oil (plus more for the grill)
  • 1 clove garlic (grated)
  • 1 teaspoon finely grated lime zest
  • 1 tablespoon fresh lime juice
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of red pepper flakes
  • 2 avocados (pitted and quartered lengthwise (leave the skin on))
  • Fresh cilantro (flaky sea salt, and lime wedges for serving)


Instructions

  1. Step 1: Heat up your grill to high heat and grease the grates with oil. In a small bowl, whisk together the olive oil, garlic, lime zest, lime juice, oregano, kosher salt, black pepper, and red pepper flakes.
  2. Step 2: Lightly drizzle the avocado quarters with oil. Grill them, turning once, until you see grill marks on the flesh side and the avocados have slightly softened, about 2 minutes per side.
  3. Step 3: Scoop out the avocado flesh onto a plate. Give the vinaigrette a quick whisk, then drizzle it over the avocados. Garnish with sea salt and cilantro. Serve with lime wedges on the side. Enjoy your grilled avocado delight!
