Ingredients

  • 1 1/4 cups peeled garlic cloves
  • 2 teaspoons salt
  • 3 cups canola oil
  • Juice of 1 lemon
  • 2 Tablespoons sour cream


Instructions

  1. In your trusty food processor, toss in the garlic cloves and salt. Give it a quick pulse for about 1 minute until the garlic is finely minced. Don’t forget to scrape down the sides for an even mix.
  2. Now, with the food processor humming away, slowly drizzle in 1 tablespoon of oil. Scrape those sides again, and keep repeating this process, adding 1-2 tablespoons of oil and lemon juice alternately until you achieve a well-combined, creamy mixture. Be patient; this step takes about 10-12 minutes!
  3. Toss in the sour cream and pulse to bring everything together.
  4. Ready to enjoy? Serve immediately, or if you’re feeling patient, pop it in the fridge to chill.
  5. To keep the goodness lasting, store your creation in an airtight container in the fridge for up to 2 days.
