Garlic Parmesan Chicken Skewers

For the chicken skewers:

  • 1.5 pounds of boneless (skinless chicken thighs, cut into small pieces)
  • 1 to 2 tablespoons of olive or avocado oil
  • 1/2 tablespoon of yellow mustard or 1 teaspoon of dried mustard powder
  • 1 1/2 teaspoons of lemon pepper
  • 1 1/2 teaspoons of paprika
  • 1 1/2 teaspoons of Italian seasoning
  • 1 teaspoon of salt
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/4 teaspoon of black pepper

For the garlic butter:

  • 1/2 cup of unsalted butter (melted (try Challenge Unsalted Butter))
  • 2 tablespoons of finely chopped parsley
  • 1 tablespoon of minced garlic
  • 3 tablespoons of grated parmesan cheese
  • 1/2 to 1 teaspoon of salt (to taste)
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried oregano
  1. Combine melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano in a small bowl.
  2. In a separate bowl, mix together the chicken with mustard, lemon pepper, paprika, Italian seasoning, salt, garlic powder, onion powder, and black pepper until well combined.
  3. Thread the marinated chicken pieces onto skewers. If you’re using wooden skewers, soak them in water for 30 minutes to prevent burning. Aim for about 6 to 7 pieces per skewer.
  4. Place the skewers in the air fryer and cook at 425°F for 6 to 8 minutes. Flip the skewers and cook for another 6 to 8 minutes until both sides are golden.
  5. Remove from the air fryer and brush the skewers with the garlic butter.
  6. Serve warm with ranch dressing for dipping. Enjoy your delicious meal!
