For the granola cups:
- 2 1/2 cups granola of your choice
- 1/2 cup raw (unsalted peanuts (or your favorite nuts/seeds))
- 1/4 cup maple syrup (or honey)
- 1 cup peanut butter (or any nut/seed butter)
- 2 teaspoons vanilla extract
For the filling and topping:
- 1 cup vanilla Greek yogurt (or plant-based yogurt)
- 1 cup chocolate chips
- 1 teaspoon coconut oil
- Flaky salt
Instructions
- In a food processor, combine all the ingredients for the crust. Pulse until the pieces are smaller, but still have some texture. If the mixture doesn’t stick together when pressed, add a bit more maple syrup.
- Spray a muffin tin with non-stick spray. Press the granola mixture tightly into each muffin cavity to create a small indentation.
- Spoon 1-2 teaspoons of yogurt into each granola cup.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals until smooth. Pour the melted chocolate over each granola cup.
- Freeze the cups for 2-3 hours until the yogurt sets.
- Carefully remove the cups from the muffin tin and sprinkle with flaky salt.
- Store them in a bag or covered container in the freezer for up to 2 months. Enjoy your frozen granola cups whenever you need a cool and tasty treat!
