Get ready for a summer treat that’s as easy as it is delicious! These no-bake granola cups are perfect for satisfying your sweet cravings on hot days. Just keep them in the freezer and grab one whenever you need a cool and tasty snack.

And here’s a tip: If you’re allergic to nuts, you can swap out the peanuts for sunflower seeds and sunflower seed butter. Feel free to get creative with different combinations!

Ingredients
  

For the granola cups:

  • 2 1/2 cups granola of your choice
  • 1/2 cup raw unsalted peanuts (or your favorite nuts/seeds)
  • 1/4 cup maple syrup or honey
  • 1 cup peanut butter or any nut/seed butter
  • 2 teaspoons vanilla extract

For the filling and topping:

  • 1 cup vanilla Greek yogurt or plant-based yogurt
  • 1 cup chocolate chips
  • 1 teaspoon coconut oil
  • Flaky salt

Instructions
 

  • In a food processor, combine all the ingredients for the crust. Pulse until the pieces are smaller, but still have some texture. If the mixture doesn’t stick together when pressed, add a bit more maple syrup.
  • Spray a muffin tin with non-stick spray. Press the granola mixture tightly into each muffin cavity to create a small indentation.
  • Spoon 1-2 teaspoons of yogurt into each granola cup.
  • In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals until smooth. Pour the melted chocolate over each granola cup.
  • Freeze the cups for 2-3 hours until the yogurt sets.
  • Carefully remove the cups from the muffin tin and sprinkle with flaky salt.
  • Store them in a bag or covered container in the freezer for up to 2 months. Enjoy your frozen granola cups whenever you need a cool and tasty treat!
