Ingredients

  • 1/2 pound ground beef (85/15)
  • 1/2 pound ground turkey
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 5 large eggs
  • Salt and black pepper (to taste)
  • Oil spray
  • 5 slices of cheddar or American cheese
  • 5 English muffins (buttered and toasted)


Instructions

  1. In a bowl, mix together the ground beef, ground turkey, brown sugar, salt, thyme, sage, paprika, garlic powder, onion powder, and black pepper. Divide the mixture into 5 to 6 equal portions and shape them into thin patties.
  2. Heat a frying pan over medium heat and add the olive oil and butter. Cook the sausage patties for 3 to 4 minutes on each side until fully cooked. Remove from the pan and set aside.
  3. Preheat the oven to 350°F and line a tray with parchment paper. Toast the English muffins in the oven for 6 to 8 minutes until golden.
  4. Meanwhile, cook the eggs in greased molds over medium heat until the whites are set. Remove the molds and set the eggs aside.
  5. To assemble the sandwiches, place a slice of cheese on the bottom half of each English muffin, followed by a sausage patty, an egg, and the top half of the muffin.
  6. Wrap each sandwich in sandwich paper and store them in a ziplock bag or container in the freezer.
  7. To enjoy, microwave the sandwiches for 90 seconds until warmed through. Then, enjoy your delicious homemade breakfast sandwich!

Notes

If you don’t have egg molds, you can make scrambled eggs or a sheet pan egg bake and cut them into squares instead.
