Ingredients

  • ½ cup cocoa powder
  • ¼ cup chocolate protein powder we used Garden of Life Chocolate Whey
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt
  • ½ cup dark chocolate chips plus extra for topping

Wet Ingredients:

  • 1 cup unsalted all-natural drippy peanut butter
  • ½ cup maple syrup
  • 3 tablespoons packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup plain unsweetened almond milk*
  • ½ cup chocolate chips melted
  • 3 tablespoons melted coconut oil

Instructions

  • Preheat your oven to 350ºF and line an 8×8-inch pan with parchment paper.
  • In a mixing bowl, combine all the dry ingredients and set aside.
  • Cream together the peanut butter, maple syrup, brown sugar, and vanilla until smooth. Then, add the eggs and almond milk, stirring until combined.
  • Mix the dry ingredients into the wet until well combined, then fold in the melted chocolate gently, leaving fudgy pockets throughout.
  • Transfer the batter into the lined pan, and top with extra chocolate chips if desired.
  • Bake for 35-40 minutes until the center is nearly set.
  • Let the brownies cool for a few minutes before transferring them to a rack. Serve warm with ice cream for a decadent treat, or let them cool completely before slicing into squares.

Notes

  • Baking times may vary, so keep an eye on them.
  • Rotate the pan halfway through baking if your oven tends to have hot spots.
  • Get creative with mix-ins to make these brownies your own!
