Flourless Peanut Butter Protein Brownies

Ingredients
- ½ cup cocoa powder
- ¼ cup chocolate protein powder we used Garden of Life Chocolate Whey
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- ½ cup dark chocolate chips plus extra for topping
Wet Ingredients:
- 1 cup unsalted all-natural drippy peanut butter
- ½ cup maple syrup
- 3 tablespoons packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup plain unsweetened almond milk*
- ½ cup chocolate chips melted
- 3 tablespoons melted coconut oil
Instructions
- Preheat your oven to 350ºF and line an 8×8-inch pan with parchment paper.
- In a mixing bowl, combine all the dry ingredients and set aside.
- Cream together the peanut butter, maple syrup, brown sugar, and vanilla until smooth. Then, add the eggs and almond milk, stirring until combined.
- Mix the dry ingredients into the wet until well combined, then fold in the melted chocolate gently, leaving fudgy pockets throughout.
- Transfer the batter into the lined pan, and top with extra chocolate chips if desired.
- Bake for 35-40 minutes until the center is nearly set.
- Let the brownies cool for a few minutes before transferring them to a rack. Serve warm with ice cream for a decadent treat, or let them cool completely before slicing into squares.
Notes
- Baking times may vary, so keep an eye on them.
- Rotate the pan halfway through baking if your oven tends to have hot spots.
