Flourless, Healthier, Vegan Protein Bars

Ingredients

  • ½ cup nut butter
  • ½ cup mixed seeds
  • ½ cup mixed dried fruit
  • ¼ cup chocolate peanut protein powder
  • Pinch of salt

For the Topping:

  • 7 oz dark chocolate
  • 1 tsp coconut oil

Instructions

  • In a large bowl, combine the nut butter and protein powder.
  • Fold in the mixed seeds and dried fruit.
  • Line a square baking pan with parchment paper and press the mixture evenly into the pan.
  • Melt the dark chocolate with the coconut oil, then pour it over the mixture in the pan.
  • Place in the fridge to set, then slice into squares or bars.
