Let’s whip up some tasty Shrimp Tacos inspired by Elote for Taco Tuesday! These tacos are packed with chipotle shrimp, grilled corn, cotija cheese, lime crema, and fresh cilantro – all the goodness for a perfect meal.
Elote Shrimp Tacos
Ingredients
For the chipotle shrimp:
- 1 pound of medium shrimp peeled and deveined
- 3 tablespoons of chipotle adobo sauce
- 2 tablespoons of olive oil
- 2 teaspoons of minced fresh garlic
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- 1 teaspoon of salt
- 1 teaspoon of oregano
- 1 teaspoon of coriander
- 1/2 teaspoon of black pepper
- 1 tablespoon of olive oil for cooking
For the lime crema:
- 1/2 cup of Mexican crema or sour cream
- 1/3 cup of mayonnaise
- Juice of half a lime
- 1/4 teaspoon of garlic powder
Additional ingredients:
- Crumbled cotija cheese
- Finely chopped cilantro
- Grilled corn
- Thinly sliced or mashed avocado
- Toasted corn or flour tortillas
- Shredded green and purple cabbage optional
Instructions
For the chipotle shrimp:
- Pat the shrimp dry and place them in a bowl.
- Add chipotle adobo sauce, olive oil, minced garlic, chili powder, cumin, salt, oregano, coriander, and black pepper. Mix well to coat the shrimp.
- Grill the shrimp on skewers for 3 to 4 minutes per side, or cook them in a hot skillet for about 8 minutes until cooked through.
For the lime crema:
- In a small bowl, mix Mexican crema or sour cream, mayonnaise, lime juice, and garlic powder until smooth.
To assemble the tacos:
- Place your toasted tortillas on a plate.
- Add cabbage if desired, followed by avocado, grilled shrimp, corn, a drizzle of lime crema, cotija cheese, cilantro, and a sprinkle of chili powder.
