Eggs in a Boat

  • 2 mini baguettes
  • 6 eggs
  • beef bacon
  • shredded mozzarella cheese
  • chopped basil
  • chopped parsley
  • grated parmesan cheese
  • red pepper flakes
  • salt
  • black pepper

For the garlic butter, you’ll need:

  • 1/2 cup unsalted butter (melted)
  • 2 tablespoons finely chopped parsley
  • 1 tablespoon finely minced garlic
  • 3 tablespoons grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  1. Preheat your oven to 400°F.
  2. In a small bowl, mix together the melted butter, parsley, garlic, parmesan cheese, salt, black pepper, and oregano.
  3. Cut three sections out of each baguette to create three wells.
  4. Brush the garlic butter inside and outside each baguette.
  5. Layer beef bacon and mozzarella cheese in each well, then crack an egg on top of each.
  6. Bake for 12 to 15 minutes until the egg whites are set.
  7. Finish off with salt, black pepper, chopped basil, parsley, more parmesan, and a sprinkle of red pepper flakes.
  • Don’t pre-cook the bacon; it’ll cook perfectly in the oven.
  • Larger eggs may need a few extra minutes to fully cook.
  • Adjust the cooking time based on your preference for the yolk consistency.
