Egg Roll Bowls

Ingredients

  • 1 tablespoon vegetable oil
  • 1 clove garlic minced
  • 1 tablespoon minced fresh ginger
  • 1 pound ground pork
  • 1 tablespoon toasted sesame oil
  • 1/2 onion thinly sliced
  • 1 cup shredded carrot
  • 1/4 green cabbage thinly sliced
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sriracha
  • Kosher salt
  • 1 green onion thinly sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  • Heat vegetable oil in a large skillet over medium heat. Add garlic and ginger, cooking until fragrant, about 1 minute.
  • Add pork to the skillet and cook, breaking it into small pieces with a spoon or spatula, until golden and fully cooked, about 8 to 10 minutes.
  • Push the pork to one side and add sesame oil to the skillet. Toss in onion, carrot, and cabbage. Stir well to mix with the meat, then add soy sauce and sriracha. Cook until the cabbage is tender, about 5 to 8 minutes. Season with salt to taste.
  • Transfer the mixture to a serving dish and garnish with sliced green onions and toasted sesame seeds. Enjoy your flavorful egg roll bowls!
