Ingredients

  • 4 cups about 6 firm peaches, peeled and sliced
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/2 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • Zest of half a lemon

**OAT CRUMBLE TOPPING:**

  • 1 cup oats
  • 1 cup flour
  • 3/4 cup brown sugar
  • 10 tablespoons butter


Instructions

  1. Preheat your oven to 350°F. In a 13×9 baking dish, put in the peaches.
  2. In a big oval baking dish, add the peaches. Mix them up with granulated sugar, brown sugar, cornstarch, lemon juice, lemon zest, vanilla extract, and cinnamon.
  3. In a separate bowl, whisk together the topping ingredients (oats, flour, brown sugar, butter). Pour this mixture evenly over the peaches.
  4. Bake for 30-35 minutes or until the edges are bubbling and the top is golden brown.
  5. Let it cool for 5-10 minutes. If you like, serve it with some ice cream. Enjoy!
