  • 4 small very ripe bananas or 3 medium-sized ones
  • 1/2 cup of melted unsalted butter
  • 1 cup of granulated sugar
  • 2 large eggs (at room temperature)
  • 2 teaspoons of vanilla extract
  • 1/3 cup of sour cream
  • 1 teaspoon of baking soda
  • 1 teaspoon of kosher salt
  • 1 cup of all-purpose flour
  • 1/2 cup of unsweetened cocoa powder
  • 1/2 cup of mini chocolate chips


Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Peel those ripe bananas and toss them into a large mixing bowl. Mash them up until they’re wonderfully creamy.
  3. In another bowl, combine the melted butter and granulated sugar. Whisk them together. Then, add the eggs and vanilla to the mix, whisking everything until it’s well combined.
  4. Now, add salt, sour cream, mashed bananas, and baking soda to the mix. Give it a good stir to combine everything.
  5. Time to sift in the flour and cocoa powder. Add this to the batter and beat until it just comes together. Be careful not to overmix.
  6. To make it even more delightful, fold in those chocolate chips.
  7. Pour the batter into a 9×5 loaf pan, and if you’re feeling extra indulgent, sprinkle some more chocolate chips on top (totally optional but highly recommended).
  8. Bake for 55-60 minutes or until a toothpick comes out clean. Let it cool in the pan for 10 minutes, then transfer it to a cooling rack.
