Dole Whip Mimosas

Ingredients
  

  • 1/4 cup sugar for rimming champagne flutes
  • Pineapple wedges
  • 1 cup pineapple juice
  • 1/3 cup coconut milk not canned
  • 1 bottle champagne cava, or prosecco
  • Whipped topping for serving

Instructions
 

  • Step 1: Sprinkle sugar onto a shallow dish. Take a pineapple wedge and run it around the rims of 6 champagne flutes, then dip each rim into the sugar. Set them aside for now.
  • Step 2: In a tall glass, mix together the pineapple juice and coconut milk until they’re nicely combined. Pour this delightful mixture into your prepared champagne flutes, then top them off with champagne for that bubbly goodness.
  • Step 3: Give each flute a lovely garnish by adding a dollop of whipped topping and a fresh pineapple wedge.
