Preheat your oven to 350°F. Grease a 9-inch pie dish or baking dish generously. Set it aside.
Peel the apples and slice them into pieces about 1/2 inch thick. It’s okay if they’re chunky!
Place the sliced apples in the prepared dish. Sprinkle 1 tablespoon of coconut sugar and 1 teaspoon of cinnamon over the apples.
In a medium bowl, combine the flour, remaining coconut sugar, melted butter, and vanilla extract. Mix well, then add the egg and chopped pecans. Stir until everything is well combined.
Spoon the batter evenly over the apples, using your hands to make it level.
Bake for 45-50 minutes, or until the crust turns golden brown.
Once done, take it out of the oven, let it cool for a bit, then dig in and enjoy your tasty deconstructed apple pie!
