Craving something sweet but also want it to be healthy? Try making date bark! It tastes just like a Snickers bar but without the refined sugar. Plus, it’s perfect for meal prep!

Ingredients
  

  • – 12 oz package Medjool dates
  • – 1/2 cup thick and creamy peanut butter
  • – 1/2 cup melted semi-sweet milk, or dark chocolate
  • – 1/4 cup chopped peanuts
  • – Flaky sea salt to taste

Instructions
 

  • **Prepare the Baking Tray:** Line a baking tray with parchment paper.
  • **Prep the Dates:** Cut the Medjool dates open down the middle and remove the pits. Press the dates down on the parchment paper with the insides facing down. Make sure they are packed tightly side by side.
  • **Add Peanut Butter:** Spread a thin layer of peanut butter on top of the dates. You can chill them in the fridge at this point or move on to the next step.
  • **Melt the Chocolate:** Put the chocolate in a microwave-safe bowl and heat it in 30-second intervals on low power. Stir between each interval until fully melted.
  • **Add Chocolate Layer:** Pour the melted chocolate over the peanut butter and use the back of a spoon or a rubber spatula to spread it into a thin layer.
  • **Top It Off:** Sprinkle chopped peanuts and flaky sea salt on top.
  • **Chill:** Transfer the tray to the fridge for 20 to 30 minutes until the chocolate is set and firm to the touch.
  • **Cut and Enjoy:** Remove from the fridge and transfer to a cutting board. Cut the bark into equal sections. Make the pieces as small or as large as you’d like. Enjoy right away or store in an airtight container in the fridge!

Notes

  • You can make the date bark as large or as small as you like, depending on how many dates you use.
  • The measurements are flexible, so feel free to adjust the amounts of each ingredient to your liking.
