FOR THE CUCUMBER AND TOMATO SALAD

  • 1 cup sliced baby tomatoes
  • 6 baby cucumbers or 1 English cucumber (chopped)
  • Juice of 1/4 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried mint
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

FOR THE WHIPPED FETA

  • 8 oz block of feta
  • 1/4 cup Greek yogurt or plain yogurt
  • Zest of a lemon
  • Squeeze of half a lemon


Instructions

  1. Take a big bowl and put in the sliced tomatoes and cucumbers.
  2. In another smaller bowl, mix the lemon juice, olive oil, vinegar, dried mint, salt, and pepper. Pour this yummy mix over the veggies and give it a good toss.
  3. Now, let’s move to the whipped feta part:
  4. Use a food processor and toss in the feta, yogurt, lemon zest, and lemon juice. Blend it until it’s super smooth and fluffy.
  5. Time to assemble! Spread the whipped feta on a serving board or put it in a big bowl. Sprinkle the cucumber and tomato salad on top.
