Crispy Air Fryer Brussel Sprout Salad

Ingredients

  • ½ red onion minced
  • 2 tablespoons white wine vinegar or rice vinegar
  • ¾ teaspoon sea salt divided
  • 2 lbs. Brussels sprouts sliced lengthwise and chopped, keeping the stump intact
  • 2 tablespoons avocado oil
  • ½ cup slivered almonds
  • 1.5 tablespoons maple syrup
  • 1 teaspoon poppy seeds
  • ¼ teaspoon flaky sea salt
  • cup golden raisins
  • ¼ cup freshly grated parmesan cheese

Maple Dijon Dressing:

  • 1.5 tablespoons maple syrup
  • 1 tablespoon white wine vinegar
  • 1 tablespoon mayo
  • 1 tablespoon stone ground mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions

  • Preheat the air fryer to 400ºF and coat the basket with 1 teaspoon of avocado oil.
  • Mix the red onion with vinegar and ¼ teaspoon of salt in a bowl. Set aside.
  • Toss Brussels sprouts with 2 tablespoons of avocado oil and ½ teaspoon of salt. Air fry until crispy.
  • Air fry almonds with maple syrup, poppy seeds, and flaky sea salt until golden.
  • Combine Brussels sprouts, raisins, onions (plus vinegar), and almonds in a bowl.
  • Shake all dressing ingredients in a mason jar until combined. Pour over the salad and toss.
  • Top with parmesan cheese and enjoy!

Notes

  • Almond cooking time may vary with different air fryers.
  • Substitute red onion with white onion or chopped green onions.
