Crispy Air Fryer Brussel Sprout Salad

Ingredients

Scale
  • ½ red onion (minced)
  • 2 tablespoons white wine vinegar or rice vinegar
  • ¾ teaspoon sea salt (divided)
  • 2 lbs. Brussels sprouts (sliced lengthwise and chopped, keeping the stump intact)
  • 2 tablespoons avocado oil
  • ½ cup slivered almonds
  • 1.5 tablespoons maple syrup
  • 1 teaspoon poppy seeds
  • ¼ teaspoon flaky sea salt
  • ⅓ cup golden raisins
  • ¼ cup freshly grated parmesan cheese

Maple Dijon Dressing:

  • 1.5 tablespoons maple syrup
  • 1 tablespoon white wine vinegar
  • 1 tablespoon mayo
  • 1 tablespoon stone ground mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper


Instructions

  1. Preheat the air fryer to 400ºF and coat the basket with 1 teaspoon of avocado oil.
  2. Mix the red onion with vinegar and ¼ teaspoon of salt in a bowl. Set aside.
  3. Toss Brussels sprouts with 2 tablespoons of avocado oil and ½ teaspoon of salt. Air fry until crispy.
  4. Air fry almonds with maple syrup, poppy seeds, and flaky sea salt until golden.
  5. Combine Brussels sprouts, raisins, onions (plus vinegar), and almonds in a bowl.
  6. Shake all dressing ingredients in a mason jar until combined. Pour over the salad and toss.
  7. Top with parmesan cheese and enjoy!

Notes

  • Almond cooking time may vary with different air fryers.
  • Substitute red onion with white onion or chopped green onions.
