Creamy Spinach Stuffed Salmon

Ingredients

  • 4 pieces of salmon (each about 4-6 ounces)
  • 4 ounces 1/2 cup of softened cream cheese
  • 1 cup of fresh spinach (chopped)
  • 2 cloves of garlic (mashed)
  • 1/2 cup of freshly grated Parmesan cheese
  • 1/2 teaspoon of ground black pepper

For the seasoning:

  • 1 teaspoon of paprika
  • 1 teaspoon of garlic powder
  • 1 teaspoon of cumin


Instructions

  1. Make a slit or pocket in each piece of salmon, about 3/4 of the way through, making sure not to cut all the way.
  2. In a small bowl, combine the softened cream cheese, chopped spinach, mashed garlic, Parmesan cheese, and black pepper.
  3. Fill each slit in the salmon with the cream cheese mixture, ensuring it’s packed in well.
  4. Mix together the seasoning ingredients and rub them onto each piece of salmon.
  5. Place the stuffed salmon pieces in a greased oven-safe skillet (a 10-inch cast iron skillet works well).
  6. Broil the salmon for about 13 minutes, or until it’s cooked to your liking.
  7. Plate up your delicious stuffed salmon and savor every bite!
