Cottage Cheese Chocolate Chip Cookies

Ingredients

**Dry:**

  • 1.25 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips

**Wet:**

  • ¼ cup unsalted butter ½ stick, softened
  • cup brown sugar
  • 1 large egg yolk
  • ½ cup blended cottage cheese 2% or 4%
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • In a bowl, mix together all the dry ingredients and set aside.
  • In a large mixing bowl, beat the butter and brown sugar with a hand mixer until light and fluffy, about 4 minutes.
  • Add the egg yolk to the butter mixture and mix well.
  • Mix in the cottage cheese and vanilla extract until combined.
  • Slowly add the dry ingredients to the wet mixture and mix until just combined.
  • Use a 1.5 tablespoon scoop to portion out the dough onto the prepared baking sheet. Flatten each cookie slightly.
  • Bake for 10-12 minutes until golden brown.
  • Let the cookies sit on the baking sheet for 2-3 minutes before transferring them to a cooling rack.

Notes

  • Avoid using non-fat cottage cheese as it contains too much water for this recipe.
  • Make sure to blend the cottage cheese until smooth to avoid large chunks in the cookies.
  • If you don’t flatten the cookies, they’ll turn out dome-shaped, but they’ll taste just as delicious!
