Cottage Cheese Chocolate Chip Cookies

**Dry:**

  • 1.25 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips

**Wet:**

  • ¼ cup unsalted butter (½ stick, softened)
  • â…“ cup brown sugar
  • 1 large egg yolk
  • ½ cup blended cottage cheese (2% or 4%)
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, mix together all the dry ingredients and set aside.
  3. In a large mixing bowl, beat the butter and brown sugar with a hand mixer until light and fluffy, about 4 minutes.
  4. Add the egg yolk to the butter mixture and mix well.
  5. Mix in the cottage cheese and vanilla extract until combined.
  6. Slowly add the dry ingredients to the wet mixture and mix until just combined.
  7. Use a 1.5 tablespoon scoop to portion out the dough onto the prepared baking sheet. Flatten each cookie slightly.
  8. Bake for 10-12 minutes until golden brown.
  9. Let the cookies sit on the baking sheet for 2-3 minutes before transferring them to a cooling rack.

Notes

  • Avoid using non-fat cottage cheese as it contains too much water for this recipe.
  • Make sure to blend the cottage cheese until smooth to avoid large chunks in the cookies.
  • If you don’t flatten the cookies, they’ll turn out dome-shaped, but they’ll taste just as delicious!
