Cottage Cheese Chocolate Chip Cookies

Ingredients
**Dry:**
- 1.25 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup semi-sweet chocolate chips
**Wet:**
- ¼ cup unsalted butter ½ stick, softened
- ⅓ cup brown sugar
- 1 large egg yolk
- ½ cup blended cottage cheese 2% or 4%
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a bowl, mix together all the dry ingredients and set aside.
- In a large mixing bowl, beat the butter and brown sugar with a hand mixer until light and fluffy, about 4 minutes.
- Add the egg yolk to the butter mixture and mix well.
- Mix in the cottage cheese and vanilla extract until combined.
- Slowly add the dry ingredients to the wet mixture and mix until just combined.
- Use a 1.5 tablespoon scoop to portion out the dough onto the prepared baking sheet. Flatten each cookie slightly.
- Bake for 10-12 minutes until golden brown.
- Let the cookies sit on the baking sheet for 2-3 minutes before transferring them to a cooling rack.
Notes
- Avoid using non-fat cottage cheese as it contains too much water for this recipe.
- Make sure to blend the cottage cheese until smooth to avoid large chunks in the cookies.
- If you don’t flatten the cookies, they’ll turn out dome-shaped, but they’ll taste just as delicious!
