Ingredients

  • 3 cups rolled oats
  • 1/4 cup chia seeds
  • 1/4 cup ground flax seeds
  • 1/4 cup brown sugar or coconut sugar
  • 1/4 cup pumpkin puree
  • 2 tablespoons pumpkin pie spice
  • 1/3 cup maple syrup
  • 1/2 cup melted coconut oil

For the Topping:

  • 1 9- ounce bag chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 cup pumpkin seeds


Instructions

  1. Let’s dive in! Preheat your oven to 325°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together all the granola ingredients until well combined. Spread the mixture evenly onto the prepared baking sheet and bake for 24 minutes, rotating the tray halfway through.
  3. Once baked, allow the granola to cool completely. While it cools, melt the chocolate chips and coconut oil together.
  4. Pour the melted chocolate over the cooled granola and spread it out evenly. Sprinkle pumpkin seeds on top and place the tray in the freezer for 20 minutes to set.
  5. Once the chocolate has hardened, break the granola into pieces and enjoy! Store any leftovers in an airtight container in the fridge or freezer for later munching. Happy snacking! 🎃
