Ingredients

FOR BROWNIES

  • Cooking spray
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup vegetable oil
  • 4 tablespoons butter melted
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon light corn syrup
  • 1 teaspoon pure vanilla extract

FOR GANACHE

  • 1 cup chocolate chips
  • 6 tablespoons heavy cream
  • Rainbow chips

Instructions

  • Step 1: Preheat your oven to 350°F. Line a 9”x9” baking pan with parchment paper and grease it with cooking spray. In a medium bowl, whisk together the flour, cocoa powder, and salt.
  • Step 2: In another medium bowl, whisk together the oil, melted butter, and sugars. Add the eggs, corn syrup, and vanilla, and whisk until everything is well combined. Stir in the dry ingredients until just mixed. Pour the batter into the prepared pan and smooth the top.
  • Step 3: Bake until a toothpick inserted into the center comes out with a few moist crumbs, about 25 minutes. Allow the brownies to cool completely.
  • Step 4: Now, let’s make the ganache! Place the chocolate chips in a heatproof bowl. In a small saucepan over medium heat, bring the heavy cream to a simmer. Pour the hot cream over the chocolate chips and let them sit for 1 minute. Then, whisk until smooth.
  • Step 5: Pour the ganache over the cooled brownies and smooth it out with an offset spatula. Sprinkle the rainbow chips on top. Place the brownies in the refrigerator for at least 20 minutes to let the ganache set before serving.
