Cookie Dough Baked Oats

Ingredients
  

  • 1 cup old fashioned oats
  • 1/2 tsp baking powder
  • Pinch of sea salt
  • 1 small/medium banana
  • 2 Tbsp cashew butter
  • 1 cup almond milk
  • 1/2 Tbsp maple syrup
  • 1 tbsp dark chocolate chips

TOPPING:

  • Handful of dark chocolate chips
  • 1 tbsp cashew butter

Instructions
 

  • Preheat your oven to 350°F.
  • In a blender, mix together the old fashioned oats, baking powder, sea salt, banana, cashew butter, almond milk, and maple syrup until you get a smooth, creamy consistency.
  • Set aside 3 tablespoons of the batter and pour the rest into an oven-safe baking dish. Stir in the dark chocolate chips until they’re evenly distributed.
  • Add 1 tablespoon of cashew butter to the center of the mixture in the baking dish, then pour the reserved batter on top. Sprinkle additional chocolate chips on top.
  • Bake for 30-35 minutes for a gooey center. If you prefer a firmer center, bake for an additional 10 minutes.
  • Let it cool for a few minutes, then dive in and enjoy the warm, comforting goodness!
